Jicama Salad

You just can't go wrong with a good jicama. Let me tell you that you need to find a GOOD ONE, though. I was lucky enough to go by the produce department in the afternoon (even though I'd gone through in the morning) and discover a new batch of jicamas with smooth, tan skin and little defect. Those are the ones to get!

I found this recipe at Simply Recipes.

Ingredients:
1 large jicama (about 1 1/2 pounds), peeled, then julienned or cubed (easiest to work with if you cut the jicama in half first)
1/2 red bell pepper, finely diced
1/2 yellow bell pepper, finely diced
1/2 green bell pepper, finely diced
1/2 cup chopped red onion
1/2 a large cucumber, seeded, chopped
1 navel orange, peel cut away, sliced crosswise, then each round quartered
1/2 cup chopped fresh cilantro
1/3 cup lime juice
Pinch of cayenne
Pinch of paprika
Salt

Optional:
1/2 avocado chopped
2 Tbsp olive oil


1. Toss together the jicama, bell peppers, red onion, cucumber, orange, and cilantro in a large serving bowl. Pour lime juice over all. Sprinkle with a pinch of cayenne and paprika. Season generously with salt.
2. Let sit a half an hour before serving.

Serves 4.

There is something you should know about me right up front. I don't eat onions. Any sort of onions. So I didn't put any onions in but I did put a tiny bit of onion salt in so I only used a little tiny bit of regular salt. I forgot to pick up a avocado *weeps* but it would have been a nice addition. Since I will probably be taking this to work with me tomorrow for lunch, I'll grab one then and add it. I think that would be delightful! I also added the tiniest splash of red wine vinegar.

Jicama Sticks

Ingredients:

1 large jicama
2 lime, juiced
1 tablespoon crushed red pepper

Peel jicama and cut into French fry-sized sticks. Combine with lime juice and cayenne pepper in a medium bowl and toss to coat. Serve as finger food.

Super good and easy as... well, Jicama Sticks!

What the heck is a jicama? They look yummy though.

What about leeks? Do you eat leeks? I'm just curious. I love onions, but they don't always love me. So this year I decided to plant leeks in our garden. I figured that for $2 seeds, I wouldn't be out much if I don't like them. But I haven't got to try them yet. *G*

Jicama is a root vegetable (a legume, actually) that is a strange cross (not literally) between a potato and an apple. It's very good eaten alone but really comes alive when bathed in lime juice.
