Pulled BBQ Chicken & Broccoli Jalapeno Slaw

I should also point out that this makes A LOT. I only used 4 chicken breasts and fed 4 people... and can feed them twice again!
Ingredients:
2 c bbq sauce, use your favorite but we always use sweet baby rays
1/2 c brown sugar
2 tbsp chopped McCormick dried onion
1 tsp garlic powder
1 tsp yellow mustard powder
1 tsp red pepper
1 tsp oregano
1 tsp salt
1/2 tsp pepper
4-6 boneless chicken breasts
1) if not using crockpot liner spray crockpot w/ cooking spray or coat with a thin layer of butter it seems to help clean up but i've started using liners which makes cleanup much easier.
2) mix all the spices and bbq sauce together
3) add chicken
4) cook either on low all day (8-10hrs) while at work or on high 4hrs
5) using two forks shred the chicken while its still in the crockpot and mix it well into the sauce
Serve on soft rolls!

If you haven't discovered liners for the crockpot, I suggest getting them. This is the sort of recipe that DEMANDS a liner because, otherwise, you're having to really work to clean it!
Now, you're going to have to bear with me for the next recipe as it isn't really a recipe but a conglomeration I came up with but it is SO TASTY! This sort of thing may become my summer eating because we were talking at work today about eating more vegetables and mixing it up so it doesn't get boring and I came home and threw this together. Slaw is something I've been making awhile so I just "eye it" when I put it all togeter
It does sort of come from this recipe by The Pioneer Woman, if you'd rather go with a tried and true form.
Ingredients:
Dice up: jicama, cucumber, carrot, jalapeno
Roughly chop: cilantro
Dump this in a bowl with some packaged broccoli slaw (or create your own if you're feeling like a gourmet) and add a bit of pepper and onion salt.
Mix some mayo, sour cream and a little white vinegar in with the vegetables and stir.
VOILA!
Now put some of the slaw on the chicken and enjoy that! So good!

The community I mentioned as a lot of really good tips and people who are pretty savy about cooking like this. They might have some better tips.
I think I'm going to have to do my Chicken Caccatori recipe to see if that one might interest you. It's from Nigella Lawson. My friend at work was even able to get her kids to eat it!
